We don't really celebrate Thanksgiving here in Australia. One of the guys and I went looking for a turkey sandwich at lunch but all we could find was chicken. I was able to spread cranberry sauce on my chicken though.
Come to think of it, you don't see much turkey in the stores here. You do see these brush turkeys wandering around outside quite a bit. I haven't heard of anyone eating them though.

Looks edible to me. I'm thinking you could stuff it with damper, wrap it in paperbark, then smoke it over charcoal. Perhaps served with jellied riberry sauce?

This is the closest I could find to a recipe on the internet:
"To cook them, you singe the feathers on the fire. Pull out its guts and cook it in a hot fire. Aboriginal people use the soft downy feathers for decoration."
I didn't see any condiment recipes but yours sounds good to me.
